Birthday Baking

After baking and decorating the 300 cookies for the gala, I thought I would have a nice break. Turns out that wasn’t true, and it has made me realize that I probably won’t have a break from baking for a long time, but I’m okay with that.

A few days after the gala was my mom’s birthday. She spent the day with her sisters while I stayed home and prepared dinner along with a birthday cake. My mom’s favourite is hazelnut dacquoise, so I decided to try my hand at it. Note to anyone baking something that is somewhat more complex: always look at the prep time so you know what you’re getting yourself into.

I’ve never made meringue before, but there’s no better time to try it then at home because family will always tell you the truth about how it turns out. I thought I had more time than I did to make this dessert and soon realized that I should have started earlier, or even the day before. While it was not a difficult recipe, it was just time consuming, especially the amount of time it takes to actually bake the meringues.

Luckily the dessert was finished before my mom and her sisters came home in the evening. I was a little nervous as to how it was going to taste considering it was the first time I’ve made it. To my surprise it was actually very good! Also, you can’t really go wrong when something is layered with homemade chocolate ganache and whipped cream. Turns out this was one of the best desserts I’ve ever made and will definitely be something I make again!
